A culinary shift is underway in Houston’s Memorial area as top chefs move westward, bringing acclaimed dining concepts to the growing neighborhood. Joining this movement is chef Bryan Caswell, who, alongside longtime friend and business partner Allison Knight, will open Latuli in Spring 2025 at 8900 Gaylord Drive in Hedwig Village.
Latuli will be an upscale yet approachable restaurant blending Gulf Coast flavors with global influences and a strong Texas identity. The space, inspired by Spanish ranch architecture and California coastal resorts, aims to offer a refined dining experience grounded in warmth, community, and familiarity.
The menu will highlight elevated Gulf seafood, wood-fired meats, seasonal produce, and bold, globally influenced spice profiles—all rooted in Caswell’s extensive culinary background and Knight’s vision for a neighborhood-centric dining destination.
Caswell, a Culinary Institute of America graduate, has led several of Houston’s most celebrated restaurants, with a career spanning globally from New York to Barcelona. Knight, a Houston native with a background in commercial real estate and a degree from Houston’s Culinary Institute LeNotre, has invested in several of Caswell’s prior ventures and now takes a more active role in shaping Latuli.
Latuli’s name is a personal one, formed by combining the first two letters of each of Knight’s children’s names—a nod to the family-first philosophy behind the concept. Together, Knight and Caswell are developing a space that merges the best of Southern hospitality, thoughtful design, and a deep appreciation for Houston’s diverse food culture.
Acclaimed designer Alfredo Paredes, known for his work on Ralph Lauren’s Polo Bar in NYC and Ralph’s in Paris, is leading the design. The interiors will reflect the restaurant’s commitment to sophistication, comfort, and cultural depth, helping establish Latuli as a standout addition to the Memorial area’s growing dining scene.
As Memorial continues to attract the city’s top culinary talent, Latuli promises to be a key player in redefining the neighborhood’s gastronomic future—an elevated yet accessible restaurant that feels just as special to local families as it does to Houston’s most discerning diners.
